Canihua
(Chenopodium pallidicaule)
Canihua is a crop from the Peruvian Andes that has been used as astronauts’ food since 1985.
This cereal is a great source of protein (15%-19%) which can be used on free meat diets due to its essential amino acids content such as lysine, isoleucine and tryptophan. It is a gluten-free food with the low glycemic index. It also contains vitamins (E, B complex) and minerals (calcium, phosphorus, and iron).
